A light, lemon citrus, sherbetty fizz, perfect for all celebrations. With English hedgerow scents and a touch of honey on the palate. The grapes are crushed to retain more of the special fruit characters that are unique to grapes grown in England. Only the free run juice is used for the sparkling wine with the pressed juice going to still wine.
This sparkling wine is made using the traditional Champagne method and traditional champagne grapes of Pinot Noir, burgundy clone and Pinot Blanc vines. The base wines are barrel fermented in French Limousin oak. It is not however a traditional French Champagne - its structure has the robust acidity and minerality you would expect, but this English cousin has distinctive fruit flavours with a delicate floral twist, lots of depth and a biscuity dry finish
A bright golden colour with a delicate mousse, this Blanc De Blancs has classic Chardonnay aromas of green apple, citrus and mineral notes combined with buttered toast and Tarte Tatin richness from extended lees ageing. This wine is a great accompaniment to seafood in general, but is perfect with freshly shucked oysters.
Fresh sourdough, magnolia and lily scents mingle with a hint of smoke over a core of greengage, red plums and dessert apples. The palate is vivid, almost vibrantly crunchy with precise, structured yet ripe acidity. Delicious served for celebrations, this wine also pairs well with wild salmon, oysters, pan fried scallops and grilled prawns
