Lind & Lime Gin is the very first spirit produced by the newly established Port of Leith Distillery Co. Lind & Lime Gin uses a carefully curated recipe of 7 botanicals to ensure that each of them is working in delicate harmony.
Juniper-driven with bright, fresh lime peel in place of the more traditional coriander seed, this makes for a gin that is at once elegant and playful, invigorating and mellow. Verdant lime and bay laurel greet the nose, while the delightful mouthfeel and a delectable, subtle sweetness come from the addition of London honey collected from local beehives, imparting a creaminess that bestows floral notes of lime blossom and jasmine. This mellows the refreshing, earthy menthol notes delivered by lingering hints of bay and angelica, which in turn beckons an elegant finish of black and green cardamom with a tickle of soft spice and nectar from fresh red raspberry leaf.
Holyrood Dry botanical recipe is at least 70% juniper with no less than 18g of botanicals in each bottle. Bottled at 43% ABV which provide a fresh flavour delivery for the citrus and piney juniper notes. Simple, rich, intense and elegant.
A light and fruity gin made at the Langley Distillery in an antique copper pot affectionally named Constance. The base is a quadruple-distilled pure grain spirit that was made from 100% wheat. The botanical selection includes juniper, coriander seeds, angelica root, lemon and orange peel, cassia bark, ground nutmeg, cinnamon bark, orris root and elderberries.
Exquisitely engineered for a more complex flavour profile, 6 O'clock adds extra juniper and six new botanicals – green cardamom, nutmeg, cumin, cassia bark, cubeb pepper and lemon – for a bolder, richer flavour; an earthy sweetness combines with citrus freshness for a dry spicy finish
Honey from their family beehives, beautiful lemongrass and a touch of locally grown lavender brings to the gin incredible savoury lemongrass flavours, a silky mouthfeel and delicate floral notes. Uniting state-of-the-art vacuum distillation with a traditional copper pot still in a process that’s tailored to suit each individual botanical, creates a gin with the freshest, fullest flavours unlike any other.
